Swiss Chard & Hot Italian Sausage Dinner

Ingredients:
- large bunch of Swiss chard
- 1 large yellow onion
- 6 garlic cloves
- 6 links of hot Italian sausage (I am sure, the sweet sausage is great too as well as the turkey sausage for a lower calorie meal)
- 6 large red tomatoes
- grated goat cheese to taste
- Kiss & Tell Salt (Saltopia – Garlic Infused Salt)
Directions:
Start by removing the sausage casings completely and then put the sausage meat, diced onion & diced garlic cloves into a large saute pan.
Saute until sausage is completely cooked. You may want to add warm water to create a “soupy” base so that the garlic doesn’t burn or stick.
Then add the diced tomatoes and a pinch of Kiss & Tell – check for the taste before adding salt…some sausage tends to be salty already.
Cover and let everything simmer for at least 15 – 20 minutes or until the tomato chunks are stewed and breaking apart. Finally, add the chopped Swiss chard and give it another 10-15 minutes to steam cook the greens.
Serve over a bed of pasta or rice and finish with a sprinkle of crumpled goat cheese. Serves 4.
